Suet – what it is and where to buy it

Suet is the solid white fat found around the kidneys and loins of beef and sheep.  You can buy suet from supermarkets prepacked in  shredded form or you can ask your butcher for suet.
You may have to ask the butcher for suet ahead of time as they don’t often keep it now.  If you buy suet from the butcher you need to shred it yourself before you use it in baking.
If you can’t buy suet you can freeze butter and shred the frozen butter with a grater or in a food processor then use if as you would the real suet.
Suet is usually used to make dumplings, and suet based puddings such as Roly Poly or boiled Christmas pudding
Update November 2013 – Shreddo is no longer being made.. Countdown is still advertising it so you may be lucky and find it at some of the CD supermarkets.  I guess this Christmas may be the last time you can buy Shreddo from a supermarket.
