Easy winter dinner

Its been a wet and rather miserable winter in New Zealand this year.  However there are some things that work really well to lift everyone spirits on these cold grey days.

One that I really like is this recipe for Graham’s thick vegetable soup I now make it in a slow cooker and it lasts a few days unless I freeze some.  It’s great to come home to after a day out – for a quick filling meal accompanied by some crusty bread picked up for the bakery or supermarket on the way home.

While the soup is heating I quickly make a self-saucing chocolate pudding so it cooks while we’re eating our bowls of soup.  Its even quicker if you make the microwaved version that will be cooked before you’ve cleared away the soup bowls.

A very quick and easy winter meal that the whole family will enjoy (Except perhaps those who still object to vegetables in any form.  Maybe they will have a bowl of plain pasta instead).

 We are updating some of the information so that it is more relevant in today’s world. I’m thinking more of recipes because in the 1970s and 80s the range of ingredients available was far narrower than we have today. Our tastes have changed as well with this greater variety of flavours  and ingredients.  For example, who would have complained about the price of out-of-season avocados back then. In New Zealand we hardly knew avocados existed.
We will still have the recipes that were used in the 70s and 80s and will add an adapted version to make use of the wider range of flavours and ingredients that we have become used to. Also look for gluten-free variations and low sugar options for some of the more traditional recipes.
If you have any preferences for recipes you would like to see updated, then do let me know and I’ll focus on those ones.

I’m delighted that Askmumnow.com is now available on mobile devices to make it much easier for you to access the content.
We also plan to update some of the information so that it is more relevant in today’s world. I’m thinking more of recipes because in the 1970s and 80s the range of ingredients available was far narrower than we have today. Our tastes have changed as well with this greater variety of flavours  and ingredients.  For example, who would have complained about the price of out-of-season avocados back then. We hardly knew what an avocado looked like let alone tasted one.
We plan to stick with the recipes that were used in the 70s and 80s and adapt them to make use of the wider range of flavours and ingredients that we have become used to. Also look for gluten-free variations and low sugar options for some of the more traditional recipes. There will also be new recipes that are not necessarily what “Mum used to make” but that are the basis for good nutritious family meals using seasonal fresh ingredients.
