Feijoa self-saucing pudding

A recipe similar to this appeared in a community newspaper recently.  I tried it last night and it was delicious. it is a fruity version of the chocolate self-saucing pudding that was (and still is) so popular in the 1970s.

This recipe is made in three parts

Part 1 – the fruit


8-10 medium feijoas
1 lemon


  1. Peel and slice the feijoas to cover the the base of the dish you will use to bake this pudding,use more feijoas if you want a deeper layer of fruit
  2. Squeeze the lemon juice over the fruit to stop it from going brown while you prepare the batter and sauce

Part 2  – the batter


50 gms margarine or butter
½ cup milk
1 cup self-raising flour
½ cup sugar
grated rind of 1 lemon


  1. Preheat the oven to 180°C
  2. On the stovetop or in the microwave, heat the margarine/butter and milk until the margarine has melted
  3. Mix the flour and sugar together
  4. Pour the milk mixture over the flour mixture and stir well till smooth.

Part 3 – the sauce


½ cup brown sugar
2 tablespoons cornflour
1 tablespoon cinnamon
1 ½ cups hot water


  1. Mix the brown sugar cornflour and cinnamon together and spread over the batter
  2. Pour the hot water over the batter. Do not stir
  3. Put the dish in to the oven and bake for 30 – 40 minutes until the batter has risen to the top of the dish and is cooked through.
  4. To serve, cut the batter into pieces and place in a serving plate.  Spoon the sauce over the top.
  5. Serve hot with whipped cream of plain yoghurt.
