Cold meat platter

This very simple platter can form the basis of a main course for summer meal.

Ingredients

A selection of cold meats from the deli at your supermarket
1 lettuce
2 tomatoes
1 cucumber

Method

  1. Wash the lettuce well, and pat dry in a teatowel or paper towel
  2. Break the lettuce up and spread the leaves over a platter or large plate as a base for the meat.
  3. Place the meats over the lettuce.  You can use slice ham, pastrami, corned beef or any other of the deli sliced meat of your choice.  You can have a platter of just one sort of meat or you can use up to three on any one platter.
  4. Cut the tomatoes into slices or wedges and spread evenly over the platter.
  5. Slice or cube the cucumber and spread over the platter.
  6. Serve with baked potatoes, a potato salad or fresh crusty bread and a tossed green salad

Allow up to 100 gms meat per person.

Note: You can use leftover roast meat or cold corned beef for this platter as a budget option instead of buying ready cooked and sliced meats.
