Green salad

A salad made from crisp fresh lettuce leaves with other salad vegetables mixed in is a very simple addition to many savoury meals – meat, fish or vegetarian

Ingredients

 1 lettuce or 1-2 cups mixed lettuce leaves
2 medium tomatoes
1 cucumber
fresh basil or parsley

 Method

  1.  Wash the lettuce leaves and dry in a clean teatowel or with paper towels
  2. Put into a salad bowl
  3. Cut the tomatoes into ½ cm slices or dice into small squares using a serrated vegetable knife
  4. Slice or dice the cucumber to give you ½ -1 cup.  If you are using a short cucumber you may want to peel it as sometimes cucumber skin can be quite tough
  5. Chop the herbs
  6. Mix all the vegetables and herbs together
  7. Drizzle with your choice of salad dressing and serve

Varations

You can vary this basic salad with different green leaves.  Beet leaves are tasty (a new way of treating silver beet that also comes with red or yellow stalks), spinach or rocket (which will give your salad a peppery flavour).

Tear the leaves into smaller pieces and add to lettuce leaves to form a different basis to your green salad.

Other vegetables that you can add include capsicums (these come in a range of colours and give a green salad a real colour hit), strips of raw carrot, asparagus in season, sliced celery, mushrooms, red onions
