Lemon syrup

This recipe gives you a concentrated syrup that you can dilute for a refreshing summer or warming winter drink.

Ingredients

6 lemons
1 kg sugar
50 gm tartaric acid
25 gm citric acid
8 cups boiling water

Method

  1. Grate the rind of the lemons then squeeze the juice
  2. Mix the rind and juice with the sugar, tartaric and citric acid, pour boiling water over and stir till sugar is dissolved
  3. Pour into clean jars with lid (such as a well washed wine bottle with screw top) and store in a cool place
  4. To serve, pour 1 part syrup to 4 parts water and ice into a jug
  5.  This syrup will keep for up to 4 weeks
  6. If serving to adults, you can add a sprig of mint or a nasturtium flower to decorate and add flavour

Vatiations

When serving, you can add a small bottle of dry ginger ale or lemonade for a refreshing cool fizzy version.

In winter add 1-2 table spoons honey and hot (not boiling) water and sip slowly.  Good for relieving the symptoms of colds.
