Cinnamon pinwheels

This recipe uses the basic plain scone dough to make a very tasty mid-morning treat.  If you’re entertaining friends at home or taking a plate when you go to someone else’s place for morning coffee then this is an interesting and different take on scones or muffins.


3 cups plain baking flour
4 teaspoons baking powder
¼ teaspoon salt
50 gms butter
1 ½ cups milk
1 tablespoon melted butter or cooking oil
½ cup packed brown sugar
2 teaspoons cinnamon


  1. Heat the oven to 200°C
  2. Prepare an oven tray, preferably one with sides by lightly greasing it with melted butter, margarine, or cooking oil then sprinkle some flour over the tray and shake the excess off
  3.  Sift flour, baking powder and salt into a bowl
  4. Using your fingers rub the butter into the flour until the mixture resembles fine breadcrumbs
  5. Add milk and mix to a soft dough with a knife
  6. Roll the scone dough out into an oblong on a lightly floured board to about 1 cm thick adding a little more flour if necessary so the dough doesn’t stick to the board or rolling pin
  7. Brush the dough with the melted butter or oil
  8. Mix the brown sugar and cinnamon and sprinkle thickly over the dough leaving about 1cm clear at the edges
  9. Roll the dough lengthwise and pinch the long edge together so it so doesn’t unravel during cooking
  10. Cut the roll into 2cm pieces (pinwheels) and place on oven tray cut side up
  11. Bake at 200°C for 10-15 minutes. Check the progress after 10 minutes to make sure the pinwheels are not burning.  (There is likely to be a burning smell as the sugar/cinnamon mixture oozes out on to the baking tray.)
  12. Serve on a paper or linen serviette (napkin) in a basket or on a flat serving dish or tray


You can substitute margarine for the butter if you prefer.  You can also use cooking oil though make sure you use an oil that doesn’t have a strong flavour of its own (eg olive oil) as that flavour could get through into your cooked scone and may not be the flavour you actually want.  Canola oil is a good all-round cooking oil.
