Date Loaf

This tasty loaf recipe was sourced from a book produced as a school fundraiser in Invercargill the 1970s. The cover is long gone so the school remains anonymous!

Ingredients

1 cup dates

1 cup water

250 gms (1 cup) sugar

1 teaspoon baking soda

30 gms butter

1 egg

250 gms (2 cups) flour

1 teaspoon baking powder

Method

1. Heat the oven to 160°C (150°C in fan oven)

2. Put dates and water into a saucepan and heat till the dates are soft

3. Mix together in a large bowl sugar, baking soda and butter and pour hot date mixture over

4. Add beaten egg

5. Add sifted flour and baking powder

6. Bake 1 hour at 350 degrees.
