Cool hardboiled eggs quickly

When you hard boil eggs you sometimes get a rather unattractive greyish layer around the edge of the yolk. To prevent this layer forming, plunge the cooked eggs into a bowl of cold water so they cool down quickly. Ice cubes added to the water helps the process along nice and quickly.

Add a few drops of white vinegar to the water in the saucepan you are using to poach an egg. The vinegar will stop the egg white from spreading everywhere.
