Caroline has sent this wonderful suet pudding recipe to us.  She says that these instructions may look tedious but read right through first and it will all make sense. It doesn’t take very long to prepare.

How to prepare a boiled pudding cloth

Some puddings are traditionally boiled in a cloth, particularly puddings made with suet such as Christmas puddings or Jam Roly Poly.

These instructions for preparing a pudding cloth are from a recipe for boiled Christmas pudding published in the Australian Womens’ Weekly

  1. Use a 60cm square of unbleached calico. If calico is new, soak in cold water overnight. Next day, boil calico for 20 minutes, rinse.
  2. Have a large boiler ¾ full of rapidly boiling water, 2.5 metres of string and the extra flour close by.
  3. Wearing rubber gloves, dip the prepared pudding cloth into boiling water and boil 1 minute.
  4. Remove cloth from water, squeeze excess water from cloth.
  5. Working quickly, spread hot cloth on bench, rub flour into the centre of the cloth to cover an area about 40cm in diameter
  6. Leave flour a little thicker in the centre of cloth where the ‘skin’ on the pudding will need to be thickest.
